1 oz / 30 ml Belvedere Pure
0.75 oz / 20 ml Lillet Blanc
0.75 oz / 20 ml Luxardo Bitters
0.75 oz / 20 ml Lime Juice
0.25oz / 10ml Camomile Syrup
3 Dash Celery Bitters
Top Cucumber Soda
Shake first six ingredients and strain into highball over cubed ice. Top with cucumber soda. Garnish with a lemon twist and thyme sprig.
*For chamomile syrup - combine 350 g caster sugar with 200 ml strong camomile tea.
*For cucumber soda – combine 500 ml cucumber juice, 100 ml water, and 10 ml white wine vinegar, strain through muslin, add to a soda siphon and carbonate.
